Ingredients

120g unsalted Grand Fermage butter
250g flour
2 level tsp. baking powder
90g sugar
1 sachet of vanilla sugar
Pinch of salt
A few drops of lemon juice
1 egg
Raspberry jam (or your favourite flavour)
Icing sugar for decoration
And don't forget to grade the recipe:
Preparation

Sift the flour and the baking powder into a large bowl.

Make a well in the centre and add the salt, sugar, vanilla sugar, lemon juice and egg.

Work a little of the flour into the mixture.

Then add the butter in small cubes and knead everything together

until it forms a smooth ball of dough. Leave to rest in the fridge for one hour.

Preheat the oven to 180°C.

Carefully roll out your dough on a work surface and cut into rounds with a pastry cutter.

Cut a small circle in the centre of half of the rounds.

Cook all the rounds in a 180° oven for 8 – 10 minutes.

Leave to cool.

Spread a little jam on the base of each biscuit,

and sprinkle the tops with icing sugar.

Place the tops on the bases and allow to set.
