Ingredients
For the red butter sauce

100g Salted organic Grand Fermage butter

250ml red wine

1 shallot
-
Pepper
For the cod and potato-carrot mash

40g salted Grand Fermage butter
-
1 pinch nutmeg
-
handful of flat parsley leaves
-
1 pinch pink peppercorns
-
250g cod
-
4 carrots

Preparation
For the red butter sauce

Make a red butter sauce by following our recipe.
For the cod and potato-carrot mash
-
Peel and rinse the potatoes and carrots.

Steam or boil them along with the cod.

Once the vegetables are cooked, mash them together with the butter and nutmeg until a smooth puree forms.

Arrange the cod and mash on a plate, and cover with the red butter sauce. Garnish with fresh parsley and pink peppercorns.
