Ingredients
For the cookie cups

100g Grand Fermage unsalted butter roll
180g flour
80g brown sugar
1 egg
80g chocolate chips
Pinch of salt
For the chocolate mousse

150g chocolate
30g sugar
4 egg yolks
120ml single cream

Preparation
Method for the cookie cups

Mix the Grand Fermage unsalted butter roll with the brown sugar.

Add in the egg and whisk.

Mix in the flour and chocolate chips.

Grease the moulds of a muffin tin and press the dough onto the bottom and around the sides of the moulds.

Place in the freezer for 20 minutes to set the shape.

Preheat the oven to 180°C.

Line the cookies with baking paper and fill with pie weights.

Bake for 10 minutes, then leave to cool and remove the cookies from the tin.
Method for the chocolate mousse

Melt the chocolate.

Beat the egg whites with the sugar, add the chocolate and mix.

Whip the cold pouring cream and carefully add it into the mixture.

Fill a piping bag with the mixture and leave to chill in the fridge for 2 hours.

Pipe the chocolate mousse into the cookie cups and serve immediately.
