Ingredients

3 packets of Grand Fermage provencale-style breaded mozzarella bites

1 kg very ripe tomatoes

1 onion
-
1 clove of garlic
-
7cl vinegar
-
45g sugar
-
1 tsp salt
-
pinch of pepper
-
pinch of paprika
-
clove

Preparation

Wash the tomatoes and cut into wedges.

Transfer to a pot with the onion and garlic (peeled and roughly chopped). Simmer on a high heat for 30 minutes.

Pass through a food mill, and then through a fine sieve or cheesecloth to obtain a smooth coulis.

Pour into a pot and add the vinegar and spices. Cook for a further 45 minutes, until the liquid has reduced by half and takes on a syrupy consistency. Stir gently.

Add in the sugar and set over a low heat for 15 minutes.

Pour into a pot and store in the fridge.

Cook the Grand Fermage breaded mozzarella bites in a frying pan for 5 minutes, and enjoy with the ketchup.
